Miso-glazed salmon with sesame greens

This is my answer to the question "what can I cook in twenty minutes that feels special?" Salmon fillets brushed with a sticky miso and honey glaze, cooked under a hot grill until caramelised at the edges, and served with quick sesame greens. It looks like restaurant food and takes less time than ordering a takeaway.

What miso does
Miso is a fermented soybean paste from Japan. It is salty, savoury and rich in umami, the deep, meaty flavour that makes food taste complete. White miso is mild and slightly sweet, perfect for glazes. Mixed with a little honey, soy sauce and rice vinegar, it becomes a glaze that caramelises beautifully in the heat.
